New Yorkers’ fondness for cocktails gave us the Manhattan, Long Island iced tea or the Brooklyn, to name a few. Many Lowcountry residents love a great, locally named cocktail as well. With that in mind, the team of mixologists at Rollers Beer, Wine & Spirits have created a series of cocktails that celebrate local landmarks, events and founding fathers. This month’s featured libation is the Spanish Wells Rebujito. This updated Spanish classic features sherry and a citrusy Spanish liqueur.
The Spanish Wells Rebujito
1 1/2 ounces Manzanilla or dry Sherry
1 ounce Liquor 43
1 ounce fresh lemon juice
2-3 ounces of Cava or other sparkling wine
Add the sherry, Liquor 43, and lemon juice into a shaker filled with ice. Shake vigorously for 30 seconds and double strain into a champagne flute. Add the bubbles and gently stir to combine. Garnish with a rosemary sprig and a dehydrated citrus wheel.
